Snapshots

Shhhh it's a secret! Our dad's birthday is coming up so his girlfriend, my sister, and I had a mini photo session for his gift. Here is just a quick preview! (Thank goodness for tripods and timers!)

Blackberry Muffins

FINALLY! Blackberry season is here! Maisy (our shih tzu) and I spent the morning picking blackberries, unfortunately it has been so hot that selection wasn't too great...most had dried and shriveled up before they were even ready. But I was able to pick just enough to make a batch of muffins! Enjoy!

Blackberry Muffins
makes 12 muffins
250 calories each

Ingredients:

1/2 cup butter, softened
1 1/4 cups sugar
2 eggs
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsweetened almond milk
2 cups fresh blackberries

Directions: Preheat your oven to 375 degrees. In a large bowl, combine butter and sugar. Add eggs, mix well. Combine the flour, baking powder salt, and almond milk. Fold in blackberries. Fill greased muffins cups two-thirds full. Bake for 25 to 30 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

Oh How I Love Today

Today, I noticed myself getting annoyed more than normal. All of the little things were driving me crazy, like a customer ripping off her receipt from my printer while it was printing. Or a driver in such a rush that they made a very illegal move and drove on the shoulder (and almost hit a biker) just because they believed they were entitled to do so to turn right. But then I realized I needed to take a deep breath and remind myself the same thing, relax. Everything on my to do list for the day will get done, but stop rushing. It is okay if the dishes don't get done or the laundry doesn't get put away tonight, it will get done. And because of this epiphany, took a few shots to remind myself how beautiful the world can be.

And on a side note, I bargain shopped this adorable new outfit! I bought the dress on ThredUp for $10, including shipping, and the jacket came from a local consignment shop for $6.99!
